Around the World Camp: Mexico

Hola!  Next stop, Mexico!

Today was a really fun day for us because it was the all important, smash-hit cooking day!  We're making quesadillas!

After covering the basics, learning about the Mayans and hearing mariachi music, we talked about popular Mexican dishes.  We had a matching picture to term page about popular Mexican foods like tacos, enchiladas, tamales, etc.



Now, cooking days are a lot...A LOT...of work for me.  I have to shop, of course, but then for the sake of speed and making sure everyone has the proper portions and all the ingredients I have to prep and portion out the ingredients.  I have 3 "camp kitchens" which include: gas burner, cutting board, knife,  and shared ingredients (like cooking oil, salt, pepper, etc.).  So I also have to set these up.  And of course, even though students do help, there is clean-up after.

Quesadillas are super-simple...a little oil, a tortilla, and a little cheese.  I also "splurged" and got a jar of salsa for us, too.

Here in Korea, you can get 6-inch tortillas at HomePlus.  (***Super important note, there are only 8 tortillas in a package...not 10 like I thought.  I had planned on 2 per student and I actually bought extra in case of burnt quesadillas, but it ended up being just enough so kids had to eat the burnt ones if they made a mistake.)  From what I've seen, there is no Monterey Jack cheese here, but you can get "pizza cheese" which is mozzarella-like and does the job nicely.  I bought the cheese that comes in pre-packaged amounts for 1 pizza, and half a packet is just enough for a decent quesadilla.
"Pizza Cheese"...there are 4 small packets inside and half a small packet worked just right for our quesadillas.


First, we walked though the process of making quesadillas.
     1. Use MEDIUM heat to warm your pan and a little bit of oil.  (I spent a lot of time emphasizing
     "medium," but kids were still determined to use high heat.  This meant a lot of first round
     quesadillas were burnt.)


     2. Add your tortilla and swirl around so the oil spreads evenly and starts to toast.


     3. While your tortilla heats, sprinkle with the cheese.  When the cheese starts to melt, fold it in
     half and let it toast.  Then carefully, turn your tortilla over so it's toasty on both sides.
            




     4. Let it cool a few minutes then it's ready to eat!  Try it with some salsa!  Yum!
